Abstract: Abstract Alginate is a primary metabolite that is needed in food and non food industries. The result of some alginate extraction methods from previous research were not optimal because the viscosity and rendemen were low. This study aimed to determine the characteristic and quality of natrium alginat Sargassum fluitans and the extraction cost neeeded by using acid alginate and calcium alginate method. This study used two different extraction methods called acid alginate method and calcium alginate method which using commercial alginate as a control. Quality parameters were performed include rendemen, moisture content, ash content, viscosity, pH, whiteness index, functional group analysis and extraction cost analysis. The results showed that alginate extraction of Sargassum fluitans by alginic acid method produced better sodium alginate quality than using calcium alginate method, but the cost more higher. Sodium alginate which produce by alginic acid method had high viscosity or 127,17 ± 11,5a cps with rendemen around 9,95 ± 0,31b %. The produce of moisture content and ash content was low or 9,35 ± 0,31b % and 21,88 ± 0,41a %. Keywords: Extraction, sodium alginate, Sargassum fluitans, viscosity

Intisari: INTISARI Alginat merupakan metabolit primer yang banyak dibutuhkan industri pangan maupun non pangan. Beberapa metode ekstraksi alginat dari rumput laut telah banyak dilakukan namun belum optimal karena viskositas dan rendemen yang dihasilkan masih rendah. Penelitian ini bertujuan untuk mengetahui karakteristik dan kualitas natrium alginat Sargassum fluitans serta biaya ekstraksi yang dikeluarkan dengan menggunakan metode ekstraksi asam dan kalsium alginat. Penelitian ini menggunakan dua metode ekstraksi yang berbeda yaitu ekstraksi asam dan kalsium alginat serta alginat komersial sebagai kontrol perlakuan. Parameter kualitas yang dilakukan meliputi pengujian rendemen, kadar air, kadar abu, viskositas, pH, derajat putih, analisis gugus fungsi dan analisis biaya ekstraksi. Hasil pengamatan menunjukkan bahwa ekstraksi alginat Sargassum fluitans metode asam alginat menghasilkan natrium alginat dengan kualitas yang lebih baik dari metode kalsium alginat namun mengeluarkan biaya yang lebih tinggi. Natrium alginat yang dihasilkan metode asam memiliki nilai viskositas yang tinggi yaitu sebesar 127,17±11,5a cps dengan rendemen sebesar 9,95±0,31b %. Kadar air dan kadar abu yang dihasilkan cukup rendah yaitu 9,35±0,31 b % dan 21,88±0,41a %.
