ANALISIS RANTAI PASOK OLAHAN BELUT DI GODEAN KABUPATEN SLEMAN

Abstract:Abstract Eel is one of the fishery products that can be used as one of the raw materials for the processed fish industry. One of the districts that are famous for its processed eel is Godean District with one of its culinary centers in the form of the Pusat Kuliner Belut Godean. This study aims to determine the profile of the involved fish business actors; identify the flow of information, goods, and finance in the processed eel supply chain; the main problems in the management of the eel supply chain; as well as knowing the model of the eel supply chain at the Godean District. The research method used is a survey of all respondents (census) traders in the Pusat Kuliner Belut Godean. Data collection is done by structured interviews and observations. The results showed that the processed eel at the Kecamatan Godean consisted of eel chips and eel mangut. The majority of fresh eels imported from outside of DIY reached 96.81%. The payment methods used tend to be flexible and rely on trust. The relationship between traders and suppliers has been established between 15-35 years, so that the actors have mutual trust with one another (trusted-based relative). The problem faced by traders is the purchase of eel stock which is hindered by an agreement between traders and suppliers. The supply chain model of eel and eel chips consists of farmers, suppliers, wholesalers, small traders, and end consumers. Keywords : Godean District, processed eel, Sleman, supply chains

Intisari:Intisari Belut merupakan salah satu hasil perikanan yang dapat digunakan sebagai salah satu bahan baku industri olahan ikan. Salah satu kecamatan yang terkenal dengan olahan belutnya yaitu Kecamatan Godean dengan salah satu sentra kulinernya berupa Pusat Kuliner Belut Godean. Penelitian ini bertujuan untuk mengetahui profil pelaku usaha ikan yang terlibat; mengidentifikasi aliran informasi, barang, dan finansial dalam rantai pasok olahan belut; permasalahan pokok dalam pengelolaan rantai pasok belut; serta mengetahui model rantai pasok belut di Kecamatan Godean. Metode penelitian yang digunakan yaitu dengan survei terhadap seluruh responden (sensus) pedagang di Kecamatan G. Pengumpulan data dilakukan dengan wawancara terstruktur dan observasi. Hasil penelitian menunjukan olahan belut di Kecamatan Godean terdiri dari keripik belut dan mangut belut. Belut segar mayoritas didatangkan dari luar DIY mencapai 96,81%. Metode pembayaran yang digunakan cenderung fleksibel serta mengandalkan kepercayaan. Hubungan antara pedagang dengan pemasok sudah terjalin antara 15-35 tahun, sehingga pelaku memiliki rasa saling percaya satu dengan yang lain (trusted-based relative). Permasalahan yang dihadapi pedagang yaitu pembelian stok belut yang terhalang oleh kesepakatan antara pedagang dan pemasok. Model rantai pasok keripik belut dan mangut belut terdiri dari penangkap, pemasok, pedagang besar, pedagang kecil, dan konsumen akhir.
